BaxterStorey at UAL are not new to FFLSH, we have been working together since 2014.

It is inspiring that BaxterStorey at UAL have retained their Gold award, showcasing a clear commitment to sourcing and serving good food. We recognise the difficult time that caterers are facing, and this case study shines a light on best practice.
As a Gold FFLSH award-holder, they are:
- Serving meat which comes from farms which satisfy UK animal welfare standards
- Serving over 15% organic ingredients and at least 5% free range pork and poultry:
- All milk is organic from West Horsley Dairy, Surrey, UK
- All of eggs are organic and free range. Also, locally sourced, lion stamped and RSPCA Assured, from Chapel farm, Guildford, Surrey (UK)
- Organic beef and free range chicken, from William White, Purfleet, Essex (UK)
- Serving sustainable fish:
- Our fish is 100% MSC pollock
- Serving locally produced and seasonal produce
- Helping to make healthy eating easier
And much more, including:
- Soups are always vegan.
- Vegan pastries and cakes are offered as alternative at most of their cafes
- 70% of their food offer is either vegetarian or vegan
- Alternative vegan drinks: soya and oat are offered with coffees, both free of charge
- Direct impact coffee. UAL’s house espresso, Cast Iron, is from a Rainforest Alliance certified estate in Guatemala, San Marcos, roasted on Betty, a 1950s Vintage Probat roaster
- Recycle used cooking oil into biodiesel.
- Since 2014 zero waste has gone to landfill. 100% of kitchen food waste goes to an anaerobic digester (and turned into renewable energy managed by Suez)
- Use rescued surplus and wonky vegetables to create part of their menus and salad bar, in collaboration with Waste Knot
- Sell vegan Lemon-aid+ and ChariTea soft drinks which are 100% organic and Fairtrade certified
